just my opinion but quint should be portrayed by harrison ford or sam neil....both with a little help from the make up team

just off the top of mind jude law for martin brody never seen his movies but i know he's famous and is in his mid to late 30's or george clooney.
just a stretch but jack black as hooper just bc i would like to see him serious for once
as the mayor i think maybe kevin kline bc i dont know any actors around the mayors age without looking like he will break his hip
